For your next trip, do some basic changes. Air up your TT and TV tires to max pressure. Don't add air to your air bags after you've hooked up your trailer and bars. Make sure the front of your trailer is lower than the rear (about 1/2" to 1") - I measure the frame to ground (once I find a level place to do the measuring). You may need to do more adjustments on your hitch to accomplish this. Might want to try different lengths of chain on the spring bars during the trip.
Even with a tongue weight you don't know total weight of loaded trailer - you'll have to assume GVWR but that might not be correct and might be even more.
There should be a label somewhere inside your trailer with "real" weights of trailer as manufactured as options and features are not normally in the literature weights.
There are some moderators on this site who have pretty extensive knowledge of TT hookups, and could possibly help you even more.
There are also some good links on this forum (albeit not-Toy Hauler, but useful information):

Have you contacted Blue Ox? There hitch is supposed to help combat sway.
