Moving weight behind the trucks rear axle may or may not affect handling as there are many players as we see just from a few replies ie; DRW vs SRW.....amount of hitch weight......distance from pin to the trailers axles.....trailers gross weight/load on the trucks front axle/tri axle vs tandem axle/etc.
My experience with pin/GN ball weight behind the trucks rear axle was similar to boshog....however this was with a one ton DRW and GN trailers with 6k-6.5k hitch loads. The big GN trailer pushed the truck all over the road. The GN plate was actually mislocated 2" behind the rear axle. After a reload back home I had my hitch installer move it 2" forward where I wanted it to begin with which made a huge difference in the rigs handling.
