We took our three kids to all the lower 48 states with a Suburban and travel trailer. Had a blast. Thankfully, the Suburban provided adequate seating for long trips.
I don't think I would have tried it with a crew cab truck. Three kids sitting shoulder to shoulder for thousands of miles would have been a recipe for disaster. It was hard enough when they each had their own seat in the Suburban.
Have you considered a bunkhouse travel trailer? A used Sunnybrook 3310 would fit the bill. https://www.youtube.com/watch?v=Gnv771rqsXg
