We store our little motorhome most of the year. When I get it ready to store, I clean out the fridge and leave the doors open. I sometimes put a towel in the freezer and hang it down to the fridge so that the doors won't close. Once it is completely dry, however, I shut it up. Been doing this for 5 years now and it is still nice and fresh when I open it up.
On our refrigerator in our Texas room, I do the same thing only I crumble up newspaper and put it inside, then close it up. I have tried leaving it open completely. In the Texas heat, it warped the seals so that the doors wouldn't completely close. DH used a heat gun to soften the seals so we could close it back up. I also tried the gadget rockhillmanor suggested. It also caused seal damage due to the Texas heat, so I never used that again. I clean it out well, open the doors to dry it good, then stuff in the newspaper and shut it up for the summer. It's ready to use when we get back down for the winter.
