Well, if he actually can't get the door open at all, then IMO his best bet would be to plug the drain to the outside and put in a fairly large amount of desiccant to keep the moisture down. Mold will not grow well without moisture. That's, of course, after cleaning the inside thoroughly.
And yes, we put a couple towels over the doors near the hinge so the doors stay open. Our fridge is close to the peninsula when the slide is in, but it can be opened a couple inches.
