Not sure if a person should then shut both valves again to make sure nothing from the black tank gets over into the gray tank or just leave them both open.

I've done this many times. However, my WW already had a valve at the outlet plus the main tank valves. I would open it until I could hear the flow slow down, and was careful not to let it fully level to avoid backflow. My trailer had 75 gallon tanks so I had a lot of extra space in that black tank.
