You gotta remember that when you plug your rig into the generator, there are more loads on it than just the AC. Fridge is one. Another is the converter trying to charge the battery.
4,000 watts should be enough to run your AC without problems. But it is not enough to power everything you got. Glad you found the limit, and that something as simple as making the fridge run on propane solved the issue for you.
