The 20 degree difference is NOT between RV inside temp and the outside air ambient temp
The 20 degree difference is between the A/C Unit Return air temp and the A/C Unit discharge air temp....basically the amount of temp drop across the Evap Coil
RV A/C Unit does not mix with outside air....strictly recirculates inside air
OP your ONE 15K A/C Unit should have been able to keep up unless:
Evap Coil and/or Return air filter is dirty
The discharge plenum is 'sealed' properly so that return air & chilled air are not combining
The duct work is not leaking cold air into 'attic' area
When on 30A source we ran our 15K in our 34' 5vr and could maintain 74*F ....course the A/C Unit ran almost 24/7
Using a 'bulb thermometer' measure the return air and discharge air temps.
18*-20* delta then the A/C Unit is functioning properly
