We always have the fridge turned on several days before we actually leave. Putting a load of warm food in a non pre-cooled fridge takes a long time to cool down. We have a lot of prefrozen food to load in after its cooled down, this helps out a lot.

I've found the fridge/freezer needs at least 48 hours to get to temp when it's warm. We place bottles of water in the freezer, they should be frozen solid with in the 48 hours. If I need to accelerate the process I place frozen bottles of water in the fridge/freezer and a fan in the fridge, that usually can cut the time down considerably.
