I have a Norcold frig in my slide and was having similar issues related to its cooling ability. This was especially true during our beach camping (which is most of our summer trips). I also had concerns about the Norcold fridge recall and the potential for fires.
I solved both these issues by installing an ARP module wired into the fridge controller. The install was a little tricky but the vendor has great tech support. Go to the below website for more information
