There is no exact definition but I see it as this.
Low Profile = can't stand up in bedroom, must crawl in.
Mid Profile = usually stand up everywhere but under 12'6" high
Full Profile = stand up throughout, over 12'6" high
Take a look at heartlandrvs.com as they have both mid and full profiles for comparison.
The Winnebago is on the limit of whats generally considered mid profile with a height of 12'6". Bedroom is standup walk around. Ceilings are arched 4" to give more ceiling height without higher walls. Once you see a full and a mid side by side you'll quickly see the difference especially when looking at the front caps.
