This has not been my experience on multiple damage claims on our house, RV and cars. Hail twice, wind once, lightning once and a deer or two.
Each case was different in how we got there but each time the adjuster handed us a check and then things were settled between the insurance company and the repair shop/contractor at the end of repairs if they differed from the adjusters estimate.
As an added bonus, if we got repairs done for less than the adjuster estimated we were allowed to keep the extra cash.
This appears to be what the OP has also experienced.
