Here is a list of payloads that are found on the yellow sticker on the door jam. It’s 5th grade math and not some sort of rocket since to staying within your truck specs. These figures are with one 200 lbs driver and 250 lbs hitch with a 5er loaded ready to go camping. If you added passengers or misc stuff to the truck you need to subtract those weights. The 5er weight isn't dry weight but ready to go camping weight.
The numbers below came from Tow Planner - Towing Planner
Payload = 1200
You're adding approximately 450 lbs. to the truck. You have 750 lbs. of payload capacity. Fifth wheels typically have 20% - 25% pin weight which gives you a maximum loaded camper weight of 3,000 - 3,750 lbs.
Payload = 1400
You're adding approximately 450 lbs. to the truck. You have 950 lbs. of payload capacity. Fifth wheels typically have 20% - 25% pin weight which gives you a maximum loaded camper weight of 3,800 - 4,750 lbs.

A lot of people look at the Towing Capacities to buy their 5er but those don't pertain to 5er as much as they do travel trailer. Truck manufacture use a 10% tongue weight for a trailer hooked to the bumper to get those high tow ratings capacity (ie 11,500). When they do post 5th wheel specs they use 15% pin weight which in the real world almost impossible to find a 5er at 15%, most 5er will run between 20 and 25%.
