If you WERE able to hang the pots and pans when enroute, you'd need to put the support frame to hang the pots and pans on the ceiling. In an RV, hanging anything from the ceiling is never a good idea. They are too thin, to weak, and hitting studs is a hit-and-miss event in order to anchor everything down.
If you are stationary, permanently, it probably would be more do-able. If you travel, you're running the risk of that pounding on the roof by gravity and all that bouncing pulling down on the ceiling. It can't be good for any RV ceiling.
