My 11.5k lb GTWR bumper pull weighed under 7500 lbs dry which gave me 4000 lbs payload if I didn't fill the water and fuel tanks. Adding 60 gallons of gasoline and 150 gallons of fresh water plus our gear gave me about 2000 lbs remaining for toys.
Some of the cheaper toy hauler have low weight rated load ramps. Make sure yours can handle the vehicle weight even if payload is sufficient.
I went to a 3500 lb enclosed trailer with about 6500 lbs of payload that I pull behind a truck camper and typically have it loaded with 2500-4500 lbs of gear and vehicles no longer worrying about the excess weight.
