Like others, I fill mine till it burps out the fill tube. Use a fill tube w/ shut off at end of hose helps. Takes about 10-15 minutes depending on house water pressure. We are on municipal water. With whatever your capacity is, the RV should be designed so that you can fill it up and travel down the road w/o a problem. Our tank is 60 gallons and have filled/travelled w/ no issues. What's the sense of having a fresh water tank of "X" capacity and not be able to fill/travel to some remote spot for fear of tank falling out of RV? Not to say this hasn't happened (poor QC/design), but water isn't always avail/good quality at your destination. Also, some coaches have onboard water filters so even the fresh water tanks water gets filtered before it enters into the rest of the coach.
