Have you towed with an 8.1L?
The one in my '01 Dually got about 9 to 10 MPG towing 13,000 of flatbed and construction equipment. This was with a utility bed on it full of tools for about another 1,000 or so pounds.
Actually that truck got around 10 MPG no matter what: towing, not toiwng, empty, loaded, town, highway, etc.
OP, your truck should be fine with the upgraded tires. You may need some air bags in the rear. Acording to AAM, who made your 10.5" rear axle, it's rated for 10,020 pounds.
Weight is not the issue. Aerodynamics is the problem. Overcoming the force of the air with a tall fiver is the issue.
I can tow my fiver fully loaded with full tanks or I could tow it empty . MPG's won't change very much. Now if I could make half as tall I would see the difference
