I used to pretty much haul ass with my truck camper but noticed that I was always passing up 5th wheelers. What's your recommended interstate speed. Is 75MPH ok? My 3500 Dodge seems to like 65-70 w...

Exactly! ;)
It's not about the "sweet spot". It's about maintaining control at all times and unpredictable emergency situations and of course speed limits and tire limitations.
Another point: Even if a driver was never ticketed for exceeding the posted speed limits, I would not want to be in an accident and have the investigators determine I was exceeding the speed limit at the time. :R
