We are thinking of tearing out old vinyl in kitchen area and putting down a vinyl plank floor.Has any one done this successfully? Most or the products I have seen say it must not go below 50 degrees. ...

I also used the snap together planks, floating. I did the floor last spring and even though it gets well below zero here, it held up well through the winter, no separating of planks.
