There are perfectly decent fifth wheels that you can pull, but it's not one of the full size units like Big Horn or some of the Montanas.
I bought a 2015 Grand Design Reflection 323BHS trailer that weighs 11K and has a pin weight of 2K--dry. They're the max I want to carry with my F250 diesel. Any heavier, and you've got to go 1 ton dual rear wheels. And with my trailer, we're not lacking for anything--suits our needs perfectly.
If I was buying a new truck today, it'd have duals.
As long as it is a 11.5" heavy duty rear end, the engine, transmission, and frame are exactly what you would get on a 3500 SRW! Upgrade brakes, tires, and springs and you have what you would get on a 3500! That said, what is the cost of doing those upgrades vs. buying the 3500 outright? Take the advice, and look at the 3500 SWR and its capacity, I think you would be miles ahead going that route.
