We bought a Jayco HT 26.5 RLS in 2012, it is almost exactly 30' long with two slide-outs, a wardrobe in the bedroom and one for the couch and dining area in the main area. Total weight capacity is 9,950 and I don't believe we have ever gotten that high. However, we put a 19' boat behind it, when going camping and fishing, that weighs right at 3,500 pounds. Our truck, a 2102 GMC DA combo has no trouble towing this package and averages almost 12 mpg going and coming from our camping and fishing trip. We towed it to California and back to see Yosemite, Sequoia, friends in Palm Desert, up to Zion and then back home, about 2,800 miles and got 12 mpg overall for the whole trip. This FW is not a bunkhouse, but Jayco does sell one in the HT line as noted above. Not necessarily a full-timing package, but we have found it to be great for our uses. Usually one week or so at the lake with the FW and we have no problems with it. Enjoy your search, that's the most exciting part of the journey.
