Your best bet is to upgrade to 16" rims and LT225/75R16E rated to 2680 per tire. They are around 29.4" in diameter, so you have to look at your axle spacing and clearance around and above the tires. You need to measure center to center of the axles. Take the tire diameter and add at least one inch to it as your minimum axle spacing. Another way to look at it is based on your current tires you will loose a little over 1" on space between the tires. There is also the LT215/85R16E that are taller yet but narrower.
For tires I would recommend the following.
Bridgestone Duravis R250 (Steel ply carcass)
Michelin XPS RIB (Steel ply carcass)
Firestone Transforce HT (Poly ply carcass)
The R250's are cheaper than the RIB's and are as good or better. Both are the gold standard. The Transforce HT has an attractive price and a good track record.
Some will want to know where you travel to stay out of your path, given the speed you travel at. If you feel a need to travel that speed then go for one of the two steel ply carcass tires I noted above.
