I know this is an old post but just wondering if raising your hitch helped. Our hitch cover has also made contact with the bed rail cover and nicked it (bed rail cover) during sharp turn to park in our driveway. We have evaluated the hitch in many sharp turns since (practicing in open space just to see at what point and where it makes contact) and it does not appear that even in 90 degree turn that the actual hitch would hit the bed rail but only the cover. I really don't want to remove the cover (it has a light attached) unless absolutely necessary but was thinking perhaps of modifying it by trimming the back of it. We thought about raising the hitch but would rather not tow nose high unless this in fact it totally resolved your issue. If we raise it, we will also be forced with having to find another storage space as the one that we rent is barely tall enough to clear our front A/C.
