we boondock a lot, and in 12 or 15 years of camping in toy haulers (3 different trailers), we have never had a failure of an RV LP fridge, and never had any ice cream melt. We are always aware of the "keeping the fridge level" issue (I think that it mostly applies to the front to back level of the trailer, which would be the side to side level of the fridge). The only time I don't worry too much about keeping the trailer level is when we stop for lunch, and part of the drill is to turn off the fridge when we stop, and turn it back on when we start to move again.
Just my experience, don't often hear from folks who don't have problems with LP fridges but we are out there.
