Went and looked at my '00 Prowler today. Looking at flipping the axles. 33" centers, but I have 15" rims/tires. 205/75/15's. I was looking at doing a suspension overhaul while I was at it. Mine has 31" axle spacing. Anyone move up from 15" to 16" rims/tires?

A ST205/75-15 can have a 1850 lb or 2150 lb rating depending on load range and axle requirements.
The Continential Vanco 2 has two diffeent 15" sizes at 2270 and 2470 lbs @ 65 psi.
Maxxis commercial grade U-168 Bravo in a 15" LT in a 2270 and 2470 lbs capacity in a 8 ply rated tire .
If your tires are the C load range several USA branded tires in a LT235/75-15 C at 1980 lbs capacity.
And the Goodyear Wrangler HT in a LT215/85-15 D at 2085 lbs capacity.
Check your wheels and wheelwell requirements.
