I am one of those that does not travel with fresh water in the tank, unless it's just a few gallons, for flushing the toilet (at most). Reason why?
Our first camper was a Dutchmen Sport (5K) lite. The fresh water tank was 50 gallons. When we first got the camper, I filled the tank and the ride always seemed to be "funky". It took a while to figure it out. The water in the tank was sloshing (although full), the movement of vehicle and then applying brakes, well ... water wants to keep moving forward, and remain still when moving forward, side ways too (for example turning corners).
The push-shove of the water caused for some weird feelings when towing. Remember, 50 gallons of water added to a 5K weight camper is a pretty good percentage.
So when we traveled without water, all that went away! Towed like a trailer! So, although the next 2 trailer got heavier and the fresh water tanks got smaller, we still travel (almost) empty, except may 5 gallons or so, just enough to flush if on the road.
That's why we travel empty, still today!
It does make me wonder how "wishie-washie" tanker trucks are when hauling their loads! It's got to be unnerving until you get use to it!
