The only current production 5er what would be a slam-dunk for that truck is the Scamp 19 ft.
There are a number of (discontinued) small 5ers what would also work well.
But honestly, it's not a real good idea.
The Escape 5.0TA might work. Personally, I think you'd be better off with a travel trailer. I'd also consider a used trailer since this would be your first RV.
As for towing with a gasser, don't be afraid to run the RPM up into the peak of the power band and don't worry about speed. Take what MPH you get for a given RPM; just manually shift into the gear that will comfortably hold that RPM without the tranny hunting, and keep it there. If that means 25 mph on a grade, so be it. Just run with the heavy boys and don't try and pass them. All you can do.
