All stay closed. Black and gray are joined together. So I use a 3rd sleeve, knife blade type valve with a 6 inch clear section. Then I dump the black first, close off the 3rd valve, and then let the gray back flush into the black for about 10 seconds, then close off the gray and open the 3 rd valve again. I repeat this at least twice and it pulls a LOT more out of the black tank. I then close off the black and let the gray wash the sewer hose. I then connect to the galley tank and let it drain last. This cleans the hose pretty good.
If you've never tried the back-flush process between your black and gray, try it. You'll be amazed how much more comes out when you back flush like that, and ... it does not take extra water to clean the tank out.
