We do exactly what you propose with our 42' Voltage Toy Hauler. The 14' garage is the ultimate flex room. When we move, it holds our motorcycles, and when we are at our site, bikes come out and I set it up as my office. Additionally, with the happy jack beds, we can use the room as a "dining room" or if we have guests, as a guest bedroom.
Ours has a 19k GVWR, and was in the 15k range when dry.
