What do you think a 8 cu ft refrigerator will be sufficient for extended period of camping.

It would depend on how long you call an extended stay. If we're away from supplies we get more dried and can goods.
If we're near a store we shop every few days and the fridge is more than adequate.
I find cold drinks can take up a large amount of space so it can be take one out put one in.
