Sounds like a lot of fun! Make sure you watch your cargo carrying capacity. A quick glance at the specs of that RZR says it can weigh up to 2,000 lbs. plus whatever fuel you carry in the filling station plus the 800 lbs. of water (assuming 100g fresh water).
The Spartan I was looking at has a cargo carrying capacity of 5,100 lbs., so it should be plenty.
