The big problem with your plan is going to be housing. In the Mountain West, there would be a great demand for your skills in the resort communities. HOWEVER, those communities have a huge shortage of affordable housing. Take Jackson, Wyoming for example. There would be positions aplenty, but no where to live unless you can afford a couple of thousand plus a month (minimum) for an RV site. You will net lose money every month.
Going south, you will probably run into a different problem. Too many potential snowbirders looking for similar positions. Unlike the summer vacation crowd, the winter sees large numbers of snowbirders flocking south and then parking it. This creates a large pool of potential part time employees for businesses to draw from. Stringing part time gigs into full time employment is going to be a job unto itself.
