There are those of us who have become "Professional Pinners" on Pinterest. You can lose hours/days/weeks/months/years in there just pinning craft projects and decorating ideas you may get around to (if you live to be 250 yrs old).
Think small I guess... try your hand at sketching/water colors of things of interest popping up on your travels. Photograph things with a digital camera and then practice those sketching/painting skills. You can get water color tablets and small sets of supplies that fit into a small tote bag.
Cross stitch is nice, but you need decent light to do it.
I read more, walk our dogs more, scheme fun crazy (but easy) dinners. In my perfect world I'd probably start dragging around a small quilting project. I have a small Featherweight sewing machine. It would be easy to set up and have fun working on a project depending on how long you were out and about.
