Had a friend years ago full-timing it. She got her daily usage down to 3 gallons per day, and that was for EVERYTHING. She cooked with it, brushed her teeth twice a day, washed and rinsed the dishes, took a sponge bath, and used the gray water to flush the john. 100 gallons woulda -- no, DID -- last her over a month.
There are a couple things to look at beyond the question of just how much water are you actually using. #1 is whether you know the black and gray tanks were full. Was this because the overflowed, i.e., into the shower for the gray tank and toilet wouldn't flush for the black or was it because the gauges said they were full? For what it is worth, the nobody's gauges are accurate.
It is possible that the 100 gallon tank only has 50 gallons of usable water in it because the pickup for the pump is only half-way down in the tank. My RV only has a 35 gallon fresh water tank, but only 25 gallons is usable, for that very reason. Drives me nuts, and one day I'll fix that. In the meantime, frankly, my wife and I can go a whole week on that 25 gallons.
You can check it by putting enough water in the tank to where you can draw it out the kitchen sink. Then let it pump out until you "run out of water." Then go around to the fresh water tank drain and measure it as you dump the rest.
