Sounds like the toilet is using a ton of water.
With traditional toilets, if there is not enough liquid in the black tank, then you will end up with the pyramid of doom. If the pyramid is large enough, it will reduce the amount that the tank can hold. Since you have a macerating toilet, this is probably not your problem.
With our 30+6 fresh, 32 grey and 32 black gallon tanks, 3 adults and 1 toddler can go 2 days while not being very conservative. We took 4 showers and a bath, used the facilities, and did dishes for 4 meals.
For our Yosemite trip, we were more conservative and used the campground facilities more often. 2 adults and 1 baby went 4 days/4 nights on the same tanks and had some water left. (battery was toast though)
