You overall idea is feasible however a 42'- 5'er will provide a great living spacer but it will limit your access to some places. You will alsdo find it tougher to have internet in remote locations. Getting off the grid maybe harder than you think.
If you stay in more mainstream locations you will have more options.
The farther you get off the grid you get the more internet and site access issues you will have.
