The issue is domicile. You'll need to find someone willing to let you claim their address as your own which is not entirely legal. Perhaps if you had a relative or friend willing to rent you a room on paper. But you would still need to show an exchange of funds. You would need some sort of proof that you're living at that address in order to register your car, get your license etc.
NH will allow you to go on the road for 2 years max without a physical address but you have to jump through some hoops. One of which is getting someone to sign a notarized document saying you authorize them to register your car at their address etc. You can't use a PMB like UPS as an address to register your car here. IMO if you're going to establish a domicile for full timing Texas or Florida would be better. My personal preference would be Florida I have 2 sons living here in NH so it would be easy for me. I'm sure I'm missing a few other points here.
