Why are you concerned about winters? If you're full-timers you can winter some place warm. Just because you're domiciled there doesn't mean you have to stay there.
Your first issue is to get a legal address. Are there mail forwarding services that will give you one?
We used Texas and the Escapees RV Club's mail forwarding which was tested in courts to be legal. We never had a problem using it for any financial institution, medical, etc.
After getting the address then if you feel it's right for you - go for it.
