UPDATE:
I spoke to a NH attorney today through my LegalShield membership, and NH residency is actually quite simple.
While you can NOT use a mailing service in NH as your residence, you can provide a lease agreement from a place you're renting as your home. It so happens that this is what I'll be doing.
That's it. Once something like that is done, you're a resident. You then have 60 days to get a license and register vehicles. Not bad.
More details coming, but for now, things are looking promising.
