assuming you have the mail forwarding service register your vehicles remotely, then yes you may just fly in, spend a night, get a receipt for the overnight with your name on it (both names if a couple) and then go to the DMV (with all your other docs required) for your DL.
when I renewed my SD DL last year, after 5 yrs, I was traveling in the SW and didn't want to drive to SD and back, so I just flew in and stayed overnight. My mail forwarding service (Americas Mailbox) has 4 motel like rooms in their building just for that purpose, as well as 30 RV spaces out back. As long as you have all the identity docs required for the new Federal Real ID law, getting the DL is a 10 min process.
