You cannot have it both ways, so if MN is your choice for a domicile, I'm sure there are lots of mail forwarding service options. BUT - if you no longer own property, you'll need to make sure that whatever you choose provides you with a legal physical address, because that is what will need to be on vehicle registrations, DL's, etc. You may want to consult a MN attorney before jumping into this.
