We are a couple who will be full time RVing. I hope to come close to double the OP's budget by boondocking but some categories seem too low.
Big categories are:
Fuel
Healthcare
Food
RV parking
If you can cut those down by boondocking, efficiency, and research, then you can live amazingly cheap.
