Since you plan on workamping, there are plenty of positions available for both you and her. She could work in the office while you're outside.
If you're parked for a long time - 3-6 months, then she could get involved with the local town with activities. I've helped out in the schools with the early reading program. They are very flexible and appreciate any amount of time you can give.
She could join a hiking group, biking group, tennis, pickleball (popular nowadays), crafts, help out in the local library, hospital and there are many free or almost free exercise programs to attend through churches or adult education classes.
She could also do what she does right now in her home. There doesn't have to be any change made.
We've never had a problem finding things to do.
