If you are in AZ and will remain there all winter there is probably no need for a dehumidifier instead you may need a humidifier. The best way to know if have a humidistat so you know how dry it is. But your hair standing on end will let you know:E We found in a dry climate if the furnace runs at all...the humidity can drop below 20% and be very difficult to keep it in the more desirable 30% range.
Now if you are in Florida...have that handy humidistat going and buy a dehumidifier if things get too damp.
I'd lay an old blanket under the mattress if you are worried about damaging the mattress but I doubt it will be damaged unless you got splinters in it.If you will be flipping it top to bottom I'd certainly add protection. In fact I'd staple on light duty carpeting or a blanket.
