I guess it depends on the CCC of your RV. Many fulltimers travel very close to their RV capacity, and water is heavy. I don't know the rig or tank size that the OP has but water weighs 8.33 lbs/gallon so if you are carrying say 80 gallon of water (about average for a FT rig), this adds 666 lbs. A 100 gallon tank would add 800 lbs. Plus most boondockers carry lots of heavy batteries, solar panels, an inverter, generator, spare fuel, etc which added together weigh a lot. If I'm already carrying all my worldly possessions with me and traveling over rough, uneven roads to reach that remote boondocking location, I'd sure hate to break a suspension component because I exceeded my rig's carrying capacity when I'm 100 miles from nowhere.
To the OP's original question, I carry a 12v submersible pump and a couple blue totes to pump water from nearby streams and lakes for bathing and washing, using bottled water for consumption. Here's a picture:
