The 7.3L Diesel is a excellent engine, and I would guess that you can get 12 MPG with it, by driving around 55 MPH. Slower = higher MPG.
However unless the unit is carefully made with lightweight materials, I would suspect that the 900 pound engine has overloaded the chassis somewhat. You might not have much cargo capacity before exceeding the 12,500 GVWR. You might be lucky enough to have a higher rated 14,050 pound GVWR. Still take it to a scale, and check your cargo rating. It was not uncommon to have RV's that almost reached their GVWR back in the 80's, by the 90's the Government was making strides to make sure manufactures had some cargo ratings on the new RV's.
