I have done what you propose in a few campgrounds. As smkettner says, you'll have 30A per side instead of 50, but it's better than just 30A to share on both sides of the breaker panel.
IF there is a ground-fault circuit interrupter on either 30A outlet, it will trip and you will NOT be able to use this adapter. So this generally will NOT work with a 30A and the common 20A GFCI receptacle.
As sch911 suggests, you can only do this if you don't have a neighbor.
