You can see the rear axle is rated at 9,600# which is what the stock tires are rated for when they have their "max" 80# psi. I assume the axle itself is actually rated higher.
For ever MH builders have been downrating the GCWR. It must be from a combination of the frame extensions they have added to the stock chassis along with the amount of tongue weight added to the rear axle. That along with the fact that many RVs are at or near their GVWRs when they leave the factory.
I think your weight of what you want to tow shouldn't be an issue, but I believe tongue weight could definitely be an issue. There are "dollies?" made that can address that issue.
