Sure. Sounds good. Maybe set it for 85F so it doesn't run all the time. You could also get a dehumidifier and use that instead to save wear and tear on the A/C. But leaving it plugged in to charge the house battery and the refer running on AC to give it extra life is always a good idea. Especially in high humidity areas. Converters are well made these days and do a good job of keeping your battery in good shape too.
I added a small 1.5 amp Schumacher battery maintainer to my brothers RV to keep the engine battery charged too as most Class C's don't have a provision for that.
