Plenty of sunlight is highly over-rated! Lol. Don't take that too seriously.
Even though we do a lot of cooking, most of our time is not spent in the kitchen, so artificial light will do just fine. I do like a light in the 5500 to 6000 K spectrum, which is a pretty white light, as opposed to the normal 2500 K or so, like most incandescents were, so that helps.
